Martha Stewart's Everyday Food is hosting an original recipe contest and this chicken sandwich is my entry. I thought I'd share the recipe with you!

Fromage Blanc Chicken Sandwiches: Yield's 3 sandwiches
1 ~ 12.5 oz can of white meat chicken in water (refrigerated fro about 3 hours)
4 ~ ribs of celery
1/2 ~ jar of fromage blanc spicy (Trader's Point Creamery makes a very good fromage blanc it's normally sold at Marsh!)
1/3 cup ~ light mayonnaise
1 ~ shallot
3 ~ hamburger buns
1 ~ tomato
1 ~ cucumber
salt & pepper to taste
First, if you can, refrigerate your can of chicken for at least 3 hours. This will ensure a wonderfully cool and refreshing sandwich. Open and fully drain the can of chicken and place in a bowl. With a fork break up the chunks of chicken until you have a nice consistency.

The cut each rib of celery into about 4 pieces and finely chop into tiny pieces. The celery will add a wonderful crunch and extra nutritional benefits to your sandwich! If you don't normally like celery try peeling it, like you would a potato, this will make the celery more tender and less stringy. Also finely dice your shallot and add to the mixture.

Next add the mayonnaise and your fromage blanc. Try your fromage blanc before adding it, some find that it is spicier than anticipated. Also add your salt and pepper (you only need a pinch of salt really).

Then combine! Make sure you thoroughly mix the fromage blanc.

Scoop on to your roll, top with sliced tomato and cucumber, then serve! This is the perfect summer lunch or dinner!
