The super bowl spread


Some great recipes were used last night in honor of AZ and PA!!! We had cheese steaks and BBQ nachos!!! Out neighbors made the most amazing brownies too!!!! It was sad though when AZ lost.... bummer


Recipe for The Best BBQ Nachos:
2-3 Chicken breasts
1 Bag of your fav corn/tortilla chips
1 bag frozen corn
1 tablespoon butter
1 tablespoon fresh cracked black pepper
1/2 bottle favorite BBQ sauce
1 can black beans
2-4 cups favorite shredded cheese
3 Springs of green onion
1 tomato

Bake chicken in oven at 350 degrees for 50 minuets in a combo of 1 cup BBQ sauce and 1 1/2 cups h2o. Let chicken rest for 10 minuets and shred to bit size portions. After just lightly coat the chicken with BBQ sauce and set aside. In a saute pan set temp to med- high heat and melt the butter then add frozen corn and black pepper. Let the corn get nice and colored, the corn should almost smell sweet and look kind of like Indian corn. Let the corn cool off to a just barely warm temp. Rinse and dry the can of black beans, and set them to the side. Now you're ready to assemble! Take your baking pan and pour a layer of chips down. Cover with half your chicken, black beans, corn, and cheese....and repeat! You should have two complete layers! Broil in the oven to melt the cheese. Chop the tomato and green onions and top the nachos with them to add a hint of color!

Like it spicy??? Drain a can of sliced or diced jalapenos and add them to each layer....make sure you pat them down with a paper towel.....we certainly don't want soggy nachos!
